When we were approached by CRAFT Beer Market to become their Community Brew for the entire summer at their Toronto and Ottawa locations, we decided to convince them to let us throw everything we could at a Double IPA. Available exclusively at CRAFT and SITW, you'll get aromas of pulpy orange juice, clementine, mixed red berries, passionfruit smoothie, and flavours of orange creamsicle, tangerine peel, strawberry pulp, sticky overripe mango, and green tea.


What You'll Love About It

This beer represents our first foray into Thiolized yeast. This process enhances a yeast’s ability to biotransform compounds found in malt and hops to unleash thiols — flavour- and aroma-active compounds reminiscent of grapefruit, passion fruit, and guava. At the same time, we sought out unique hops from our friends at Crosby Farms, and tried our first Cryo hops as well.

 

How It's Made

We mash hopped this with Ontario Cascade hops to release additional thiols, then brewed traditionally with malted barley, wheat, and oats. We put Cryo Mosaic in the whirlpool, then it hit the fermenter with the Thiolized yeast before we dry hopped it with Belma, Zappa, and Mosaic.

 

Why Is It Called Spray Bow?

A spray bow is that rainbow that appears from out of a waterfall. We didn't know either, but the gang at CRAFT knew all about it, and we knew right away it was the right name for this one.
