Golden Gale IPA is a curious collab - and homage to our local Golden Gaels - between Something in the Water and our Princess St compadres, Daft Brewing. Think of it as an epic IPA with a curious botanical twist: Locally foraged sweet gale.
What You’ll Love About It
Daft have always embraced the use of botanicals in their beers, and when it came time to collab it was right where our minds went. As our first Kingston collab, paying homage to the Golden Gaels seemed spot on. So we built a solid IPA showcasing Ontario pilsner and wheat, a bit of Canadian oats, and three of the best hops we had waiting to try: Idaho 7, Mosaic, and Cryo Simcoe. Finally, a touch of cold-steeped sweet gale to provide that curious little twist to a fun botanical IPA.
How It's Made
We started with Pilsner and Wheat from Mississippi Mills, a maltster located not far from Kingston. A touch of Canadian oats is followed by a robust hopping with Idaho 7, Mosaic, and Cryo Simcoe. Finally, we cold steeped locally foraged sweet gale just prior to packaging.
How To Enjoy It
With good friends at 8-10° Celsius.
